I've been using some "Simple Green" and a hose to wash
my engine.  It does a wonderful job, especially on the manifold!
I would probably be careful with a pressure sprayer if the spray
is way too powerful.  I never had to cover any parts underneath
the hood since the car is distributorless...   :)
