How does regrinding work?

The Techtonics 260 Cams for the VR6 are supposedly regrinds. Could
someone please tell me how you would regrind a cam for increase lift and
duration? It seems to me (as my friend pointed out) that if you take
material away from the cam lobes themselves either a.) the valve would
no longer seal properly; and/or b.) it would DECREASE lift since the
cam pushes the valve into the cylinder. Thanks in advance for you
