Cowens was a pure center, not a PF, but I can't think of anyone better, 
offhand.  John Havlicek belongs on the team at SF.  Tiny Archibald 
would be another possible PG.  Also, if you aren't limited by time on the 
team, Pete Maravich played for them at the tail end of his career.  I would 
say:

PG:  Cousy       Archibald
SG:  DJ          Maravich
SF:  Bird        Havlicek         Walker
PF:  McHale      Cowens
C :  Russell     Parish           Walton
