Making an "o" with thumb and forefinger & holding up your other fingers
is well known in Southern California to mean only blood (not blood sweat
& tears). Paul's neighborhood of Inglewood is famous for being blood
gang territory. Even though Paul was never affiliated with the gang, he
knows very well what the gesture means when he psych's himself up every
pregame.
I'm think you're right that Paul was instinctively throwing up his
neighborhoods set to show that he's hard & won't back down after the
rookie put him on the ground, hit a J, and taunted.
It worked for Paul, he played a really strong physical game in the next
blowout. He should get Ray to toughen up by doing it too ;)

Obviously, "blood, sweat, and tears," means something
to Pierce and I'm sure doesn't care if the Hawks don't
know about it. The sign was more about him than it
was about them. It was him telling them he has heart
and he isn't gonna back down from no punk ass rookie
bitch.
