  Sounds pretty good and shouldnt be to hard to do.
<<2) G60 engine out of a Corrado
  Good thought but I think you could get more power out of #1
<<3) VR6 engine out of a late model Jetta
  Can and has been done, not sure on how hard.
<<4) Rebuilt 16v engine out of an A2
   Should be easy but not as much power as 1-3.

   If you can get a 1.8t it shouldnt be to hard to get in and there are
endless power upgrades.
   I think the best place to call would be Techtonics, the are well versed
in engine swaps and probably have done everything you are contemplating.
